Wah, I’m not 60 anymore now I’m in my sixties.

I like to start any day off with a bake.

An acceptable sourdough loaf. Good spring, huge ear, and many blisters. King Arthur Flour baking school taught me to bake these until you see all those colors.

As many people know I’ve been sourdough baking bread since 2017ish when our neighbor Max gave me some starter. It took almost six months and dozens of fails before I had a decent looking loaf. I now bake all my loaves exclusively in what you see above; the classic Dutch oven.

This one is cool because it’s easy to load the dough into it. What you see in that picture is actually the bottom of that Dutch oven sitting on top of the top, so the bottom is very shallow and flat and the top is tall and creates the dome. Dutch ovens lock in steam, which is important for sourdough bread to bake so it can spring before the outside crust hardens.
